Cucumber Pancake recipe

Cucumber Pancake (kakdi thalipeeth):

Kakdi Thalipeeth is one of the traditional dishes in Maharashtra. It is also known as "Dhapad" in marathi. Generally, this dish is prepared with rice flour. In this recipe, I've used gram flour instead. It is very easy-to-make, simple breakfast recipe.

INGREDIENTS:-                                                         

Cucumber - 2                                                               
Gram flour - 3/4 cup 
Wheat flour - 1/4 cup
Salt to taste
Turmeric Powder - 1/2 tsp
Chilli Powder - 1/2 tbsp 
lemon - 1
Coriander leaves
METHOD:-
  1. Firstly, grate the cucumbers and combine it with salt in a bowl.
  2. Now, add turmeric powder and chilli powder. (You can also add one green chilly paste for more tangy flavor)
  3. Then add gram flour and wheat flour. Combine the mixture well. Add enough water and mix well to make a smooth batter.  Keep stirring the batter continously. Make sure the batter is neither too thick nor too thin.
  4. Then finally add lemon juice along with some fresh coriander leaves.
  5. Mix all the ingredients well.
  6. Heat a non-stick pan. Spread 1 tsp of oil. Pour a spoonful of the batter on the pan and cook on both the sides. Be careful while flipping the pancake.
  7. Repeat the process with remaining batter.
  8. Serve immediately. ( Tastes delightful when served with green chutney)
